Easy Chicken Enchiladas Recipe-Cheesy, Flavorful & Family-Friendly

Ingredients
    Red Enchilada Sauce
  • 2 tbsp olive oil
  • 2 tbsp all-purpose flour (or gluten-free flour for GF version)
  • 2 tbsp chili powder
  • 1/2 tsp garlic powder
  • 1 Chopped onion
  • 1/2 tsp ground cumin
  • 1/4 tsp dried oregano
  • 1/4 tsp salt (more to taste)
  • 1 1/2 cups vegetable or chicken broth
  • 1/2 Chpped red Bel pepper
  • 2 Clove Garlic
  • 1/2 cup Cherry Tomatoes
  • 1/4 tbsp Butter (Optional)
  • For the Chicken Enchilada
  • 2 cups cooked shredded chicken (rotisserie works great!)
  • 1 1/2 cups red enchilada sauce (store-bought or homemade)
  • 1 1/2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt & pepper to taste
  • 6 soft 6–8 flour or corn tortillas
  • Optional toppings: chopped cilantro, sour cream, avocado, lime wedges

    Make the Sauce
    • Roast chopped onion, cherry tomatoes, and red pepper in the oven at 400 degrees for 25 minutes.
    • In a saucepan, heat olive oil over medium heat. Whisk in flour and stir for 1 minute to form a smooth roux.

    • Add chili powder, cumin, garlic powder, onion powder, oregano, cinnamon, and salt. Stir until fragrant—about 30 seconds.

    • Add butter (Optional)
    • Add roasted tomato pepper and slowly whisk in broth to avoid lumps. Bring to a simmer.

    • Let simmer for 5–7 minutes, stirring often, until slightly thickened.

    Make the Enchilada
    • Preheat the oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.

    • Combine the shredded chicken, 1 cup of enchilada sauce, and seasonings. Mix well.

    • Warm tortillas slightly to make them pliable. 

    • Pour some olive oil and sauce at the bottom of your baking dish, fill each with a scoop of the chicken mixture, add the cheese, and roll tightly. Place seam-side down in the baking dish.

    • Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.

    • Bake uncovered for 20–25 minutes or until cheese is bubbly and golden.

    • Garnish it with your favorite toppings, and serve it hot!
