Gluten-Free Oat and Banana Muffins

Ingredients
  • 2 large ripe bananas, mashed
  • 2 cups old-fashioned oats (blended into flour or use oat flour)
  • 2 large eggs
  • 1/3 cup pure maple syrup
  • 1/4 cup melted coconut oil (or unsalted butter)
  • 1 tsp vanilla extract
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
