Grilled Peach and Chicken Salad

Ingredients
    Salad:
  • 2 boneless, skinless chicken breasts
  • 2 fresh peaches, halved and pitted
  • 4 cups fresh arugula
  • ¼ cup goat cheese, crumbled
  • ¼ cup walnuts, roughly chopped
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • Dressing:
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • Pinch of sea salt
  • Freshly cracked black pepper

    1- Prep the Grill

    Preheat grill to medium-high heat. Brush chicken breasts and peach halves with olive oil and season with salt and pepper.

    Grill chicken for 5–6 minutes per side, or until cooked through. Grill peaches cut-side down for 3–4 minutes, until grill marks appear and peaches slightly soften. Remove everything and let it rest.

    3- Slice & Assemble:

    Slice the grilled chicken and peaches. On a large plate or bowl, layer arugula, then top with sliced chicken and peaches. Sprinkle with crumbled goat cheese and walnuts.

    Whisk together olive oil, balsamic vinegar, honey, salt, and pepper in a small bowl.
