    For the Grilled Salmon:
  • 2 salmon fillets (6 oz each)
  • 1 tsp olive oil
  • Salt & black pepper to taste
  • Juice of ½ lime
  • For the Quinoa:
  • 1 cup cooked quinoa
  • 1 tbsp chopped parsley or cilantro
  • 1 tbsp chopped red bell pepper (optional)
  • Salt to taste
  • For the Mango Salsa:
  • 1 ripe mango, diced
  • 1 tbsp red onion, finely chopped
  • ½ jalapeño, minced (optional for spice)
  • 2 tbsp cilantro, chopped
  • Juice of ½ lime
  • Pinch of salt
  • Toppings:
  • ½ avocado, sliced
  • Extra mango cubes or cilantro for garnish
