Mediterranean Spinach, Tomato & Feta Frittata

Ingredients
  • 8 large eggs
  • 1/4 cup whole milk (or dairy-free alternative)
  • 2 cups fresh baby spinach
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 tsp dried oregano
  • Salt and pepper to taste

    Sauté Veggies:

    In an oven-safe skillet, heat olive oil over medium heat. Add chopped onion and garlic; cook until fragrant and soft (about 2-3 minutes). Add spinach and cook until wilted.

    • Toss in cherry tomatoes and cook for another 2 minutes. Spread everything evenly in the skillet.

    In a bowl, whisk eggs with milk, oregano, salt, and pepper.
