Mini Apple Pies

Ingredients
  • 2 medium apples (Granny Smith or Honeycrisp)
  • 2 tbsp brown sugar
  • 1 tbsp granulated sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg (optional)
  • 1 tbsp lemon juice
  • 1 tbsp butter
  • 1 tsp cornstarch (optional, helps thicken filling)
  • 1 egg 1 + 1 tbsp water (for egg wash)
  • black sesame seeds or coarse sugar for topping (Optional:)
  • 1 sheet puff pastry, thawed

    In a small saucepan over medium heat, melt butter. Add diced apples, brown sugar, granulated sugar, cinnamon, nutmeg, and lemon juice. Cook for 5–7 minutes, until apples are soft and slightly caramelized. If too liquidy, stir in cornstarch and cook 1 more minute. Remove from heat and let cool slightly.

    Prepare the puff pastry:

    Roll out your thawed puff pastry on a lightly floured surface. Cut into 6 equal rectangles (or desired mini pie shapes).

    Assemble the pies:

    Place a spoonful of the apple mixture on half of the rectangles. Leave a small border around the edges. Place the remaining rectangles over the top and press edges with a fork to seal.

    Brush the tops with egg wash. Use a sharp knife to make a small slit or two on top for steam to escape. Sprinkle with black sesame seeds or sugar if desired.
